INGREDIENTS
6 oz Lean Ground Turkey (170g)
2 large Egg Whites (66g)
1 tbsp Almond Flour (9g)
1 large Zucchini (200g)
0.75 cup Fresh Marinara Sauce (190g)
1 tsp Olive Oil (4.5g)
2 cloves Garlic, minced
2 tbsp Fresh Basil, chopped
1 tsp Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine the lean ground turkey, egg whites, almond flour, minced garlic, chopped basil, oregano, salt, and pepper. Mix gently until just combined.
Form the mixture into small meatballs, about the size of a golf ball.
Place the meatballs on a baking sheet lined with parchment paper and bake for 15-18 minutes, or until fully cooked.
While the meatballs are baking, spiralize the zucchini into noodles. Heat the olive oil in a skillet over medium heat and lightly sauté the zucchini noodles for 2-3 minutes until just tender.
Warm the fresh marinara sauce in a small saucepan over low heat.
Plate the zucchini noodles, top with meatballs, and spoon over the warm marinara sauce.
Garnish with additional fresh basil if desired, and serve immediately.
