INGREDIENTS
2 medium Yellow Onions (240g)
2 Garlic Cloves (6g)
1 teaspoon Olive Oil (5g)
2 cups Low Sodium Vegetable Broth (480g)
1/2 cup Cooked Lentils (100g)
1 slice Whole Grain Bread (40g)
2 ounces Cheddar Cheese (56g)
Pinch of Dried Thyme
Salt and Black Pepper to taste
PREPARATION
Thinly slice the onions and mince the garlic.
Heat olive oil in a large saucepan over medium heat. Add the onions and garlic, and cook slowly, stirring occasionally, until the onions are deeply caramelized, about 15-20 minutes.
Pour in the vegetable broth and add the cooked lentils. Stir in a pinch of dried thyme and season with salt and pepper. Allow the soup to simmer for 5-10 minutes to meld the flavors.
While the soup simmers, toast the whole grain bread until it's golden and crispy.
Top the toasted bread with the cheddar cheese and place under a broiler or in a hot oven just until the cheese begins to melt and bubble.
Ladle the soup into bowls and serve with the crispy cheese toast on the side or on top. Enjoy your comforting and nutritious meal!
