INGREDIENTS
1/3 cup Oat Flour (approx 40g)
3 large Egg Whites (approx 100g)
1 large Whole Egg (approx 50g)
1 scoop Vanilla Whey Protein Isolate (approx 30g)
1/2 teaspoon Baking Powder (approx 2.5g)
1 medium Banana (approx 118g)
1 teaspoon Butter (approx 5g)
PREPARATION
In a bowl, whisk together the oat flour, protein powder, and baking powder.
Separate egg whites from the whole egg and add all to the dry ingredients. Whisk until smooth and let the batter rest for 5 minutes.
Heat a nonstick skillet over medium heat. Lightly coat with a small amount of butter or cooking spray.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
In a separate pan over medium heat, melt the teaspoon of butter. Slice the banana and add to the pan with a light drizzle (about 1/2 teaspoon) of water if needed to prevent sticking, allowing the banana to warm and slightly caramelize for 2-3 minutes.
Plate the pancakes and top with the warm caramelized banana slices.
Serve immediately for a warm, protein-packed meal.
