INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus Spears
300 g Cauliflower Florets
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
1 tsp Garlic Powder
PREPARATION
Pat the salmon dry and season both sides with salt, pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat with olive oil until shimmering.
Place the salmon in the skillet skin-side down and sear for about 3-4 minutes, then flip and cook for another 2-3 minutes until cooked through.
Meanwhile, steam the asparagus in a steamer or over a pot of boiling water for about 5-6 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer the cauliflower to a blender or use a hand masher, add lemon juice, a pinch of salt and pepper, and blend until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Garnish with additional lemon juice if desired and serve warm.
