INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/2 cup Unsweetened Almond Milk
1 tsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon fillet skin-side down (if applicable) in the skillet and sear for about 3-4 minutes per side or until just cooked through. Remove from heat and set aside.
Steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
Meanwhile, chop the cauliflower into florets and steam it along with a clove of garlic for about 8-10 minutes until soft.
Transfer the steamed cauliflower and garlic to a blender, add the unsweetened almond milk, and blend until smooth. Adjust the consistency with a little extra almond milk if needed, and season with salt and pepper to taste.
Plate the seared salmon with a side of steamed asparagus and a serving of garlic cauliflower mash. Serve immediately.
