Enjoy a nutritious dinner featuring a beautifully seared salmon fillet paired with tender steamed asparagus and a creamy garlic mashed cauliflower enhanced with a tangy touch of Greek yogurt. This meal balances indulgence and wholesome ingredients for a satisfying clean eating experience.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower Florets
0.75 cup Nonfat Plain Greek Yogurt
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat until shimmering. Sear the salmon fillet skin-side down for about 4-5 minutes, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
In a pot, add the cauliflower florets and minced garlic with just enough water to cover. Boil until the cauliflower is soft, about 8-10 minutes.
Drain the cauliflower and garlic, then transfer them to a bowl. Add the nonfat Greek yogurt and 1 teaspoon olive oil, then mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic mashed cauliflower. Serve immediately.
