INGREDIENTS
5 oz Sirloin Steak
150 grams Baby Potatoes
0.5 tbsp Olive Oil
2 cloves Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt, to taste
Black Pepper, to taste
PREPARATION
Preheat your oven to 425°F. Wash the baby potatoes and cut any larger ones in half to ensure even roasting.
In a bowl, toss the potatoes with half of the olive oil, a pinch of salt, and black pepper. Spread them out on a baking sheet in a single layer.
Roast the potatoes in the oven for about 20-25 minutes until they are golden and crispy, stirring halfway through.
While the potatoes are roasting, pat the steak dry with paper towels. Season both sides generously with salt and black pepper.
In a skillet, heat the remaining olive oil over medium-high heat. Add the steak and sear for about 3-4 minutes per side for medium-rare. Add the crushed garlic and fresh rosemary and thyme to the pan during the last minute to infuse the steak with flavor.
Remove the steak from the skillet and allow it to rest for a few minutes.
Plate the steak alongside the crispy roasted potatoes and garnish with the herb and garlic remnants from the pan. Serve immediately.
