INGREDIENTS
4 oz Chicken Breast
1/2 cup cooked Whole Wheat Pasta
1 cup Broccoli
1 tsp Olive Oil
1/4 cup Nonfat Greek Yogurt
1 tbsp Parmesan Cheese
1 clove Garlic
Salt & Pepper to taste
Dried Basil to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Season the chicken breast with salt, pepper, and a pinch of dried basil. Heat a skillet over medium heat with the olive oil and sear the chicken for about 4-5 minutes per side until cooked through. Once done, slice the chicken into strips.
Toss the broccoli with a bit of olive oil, salt, and pepper, and spread it on a baking sheet. Roast in the preheated oven for about 15-20 minutes until tender and slightly charred.
Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
In a small saucepan over medium-low heat, sauté the minced garlic until fragrant. Stir in the Greek yogurt and Parmesan cheese until well combined, and season with salt and pepper to create a light alfredo sauce.
Combine the pasta with the sauce in a large bowl, then gently mix in the sliced chicken and roasted broccoli.
Serve warm, garnished with a sprinkle of extra Parmesan cheese or dried basil if desired.
