2 tsp Olive Oil
1 tbsp Lemon Juice
2 cloves Garlic
2 cups Spinach

PREPARATION
Pat the chicken breast dry and season lightly with salt and pepper. In a small bowl, mix the lemon juice and one minced garlic clove.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the chicken breast and sear for about 4-5 minutes per side, or until golden brown and cooked through.
While the chicken is cooking, heat the remaining teaspoon of olive oil in another pan over medium heat. Add the remaining minced garlic and sauté for about 30 seconds until fragrant.
