INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tbsp Non-Fat Greek Yogurt
2 cloves Garlic
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides generously with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once hot, lay the salmon skin-side down and sear for about 3-4 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until desired doneness is reached. Remove from the skillet and let it rest.
Meanwhile, trim the ends of the green beans. In a separate pan, lightly sauté the green beans with a splash of water and one minced garlic clove over medium heat for about 5-6 minutes until tender-crisp.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Place them in a blender or food processor along with 2 tablespoons of non-fat Greek yogurt and one minced garlic clove. Blend until smooth and season with salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately and enjoy your nutritious dinner.
