INGREDIENTS
3 oz Chicken Breast (85g)
1 medium Sweet Potato (114g)
1 cup Mixed Vegetables (150g)
1 slice Whole Grain Bread (28g)
2 tsp Peanut Butter (20g)
1.5 tsp Olive Oil (7g)
1 clove Garlic
Salt and Pepper, to taste
PREPARATION
Preheat your oven to 375°F.
Season the chicken breast lightly with salt and pepper. Place it on a baking sheet lined with parchment paper.
Roast the chicken in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F.
While the chicken bakes, peel and cube the sweet potato. Boil in lightly salted water until tender, about 15 minutes.
In a small pan, warm the olive oil over medium heat and sauté the minced garlic until fragrant, then add to the sweet potato. Mash the sweet potato until smooth, adding a pinch of salt and pepper to taste.
Steam the mixed vegetables until just tender, approximately 5-7 minutes.
Toast the whole grain bread lightly and spread the peanut butter evenly on the toast.
Plate the chicken breast alongside a generous portion of garlic sweet potato mash and steamed vegetables. Serve with the peanut butter toast on the side.
