PREPARATION
Preheat your oven to 425°F.
Toss the cauliflower florets with half of the olive oil, salt, pepper, and a sprig of thyme. Spread them on a baking sheet and roast in the oven for about 20-25 minutes until tender and lightly browned.
While the cauliflower roasts, season the salmon fillet with salt, pepper, and a squeeze of lemon juice. Heat the remaining olive oil in a skillet over medium-high heat.
