A vibrant, satisfying dish featuring crispy extra-firm tofu coated with toasted sesame seeds, paired with a medley of fresh, colorful stir-fried vegetables. Bright bell peppers, crunchy broccoli, and sweet carrots are quickly sautéed in a light sauce for a balanced, flavorful meal.
INGREDIENTS
250 grams Extra-firm Tofu
1/2 cup Shelled Edamame (approx. 78g)
2 tablespoons Sesame Seeds
1 cup Broccoli (chopped)
1 medium Bell Pepper
1 medium Carrot
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Rice Vinegar
1 teaspoon Olive Oil
PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes.
In a shallow bowl, toss the tofu cubes gently with one tablespoon of sesame seeds.
Heat olive oil in a non-stick pan over medium heat. Add the tofu cubes and sauté until golden and crispy on all sides. Remove and set aside.
In the same pan, add chopped broccoli, sliced bell pepper, and julienned carrot. Stir-fry for 3-4 minutes until the vegetables start to soften but remain crisp.
Add the shelled edamame to the pan along with the low-sodium soy sauce and rice vinegar, stirring to combine.
Return the crispy tofu to the pan and mix gently, allowing the flavors to meld for about 1-2 minutes.
Sprinkle the remaining teaspoon of sesame seeds over the dish before serving.
