INGREDIENTS
4 oz Chicken Breast
2 oz Whole Wheat Pasta (dry)
1/2 cup Red Bell Pepper
1 cup Spinach
1 tsp Olive Oil
1 clove Garlic
1/2 cup Diced Tomatoes
1 tsp Paprika
1/2 tsp Red Chili Flakes
Salt & Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and add the whole wheat pasta; cook according to package instructions until al dente, then drain and set aside.
Season the chicken breast with salt, pepper, paprika, and red chili flakes.
Heat the olive oil in a skillet over medium-high heat. Sauté minced garlic until fragrant.
Add the chicken breast to the skillet and cook for about 5-6 minutes on each side or until fully cooked and lightly browned.
Remove the chicken from the skillet and allow it to rest for a few minutes before slicing into strips.
In the same skillet, add the red bell pepper and sauté for 2-3 minutes until slightly softened. Add the diced tomatoes and spinach, cooking until the spinach wilts.
Return the sliced chicken to the skillet and toss in the cooked pasta until everything is well combined and heated through.
Adjust seasoning with additional salt, pepper, or paprika as desired, and serve hot.
