Seared Salmon with Steamed Asparagus and Sweet Potato Mash
Enjoy a delightful dinner featuring succulent seared salmon paired with crisp steamed asparagus and a creamy sweet potato mash, finished with a drizzle of olive oil for an added touch of richness.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
1 cup raw Asparagus
1 cup mashed Sweet Potato (approx 200g)
1 tbsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt, pepper, and a squeeze of lemon juice.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Sear the salmon for about 3-4 minutes per side, or until the exterior is golden and the fish is cooked to your preference.
Meanwhile, steam the asparagus until tender yet crisp, about 5-7 minutes.
For the sweet potato mash, peel and chop the sweet potato into chunks. Boil until tender, about 10-12 minutes, then mash with a little salt, pepper, garlic (minced), and the remaining olive oil until smooth.
Plate the seared salmon alongside the steamed asparagus and a serving of sweet potato mash. Drizzle a bit more lemon juice if desired and enjoy!
