INGREDIENTS
6 ounces Sole Fillet
1 cup Asparagus
1 tablespoon Olive Oil
2 tablespoons Lemon Juice
1 clove Garlic
2 tablespoons Fresh Parsley
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
On a baking sheet, toss the asparagus with half of the olive oil, 1 tablespoon lemon juice, minced garlic, salt, and pepper. Roast in the oven for 10-12 minutes until tender and lightly crisped.
Meanwhile, pat the sole fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Once the oil is hot, add the sole fillet to the pan and sear for about 2-3 minutes on each side until the fish is opaque and flakes easily with a fork.
During the last minute of searing, drizzle the remaining lemon juice over the fish and sprinkle with fresh parsley.
Plate the seared sole alongside the roasted asparagus and serve immediately.
