INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 cloves Garlic
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for green beans)
1 tsp Olive Oil (for cauliflower mash)
1/8 cup Chopped Almonds
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a teaspoon of olive oil in a non-stick skillet over medium-high heat. Sear the salmon for about 3-4 minutes per side until a crisp crust forms and the center reaches desired doneness. Remove and set aside.
In another pan, heat a teaspoon of olive oil over medium heat. Add the minced garlic (from 2 cloves) and sauté for 30 seconds until fragrant. Add the green beans and stir-fry for about 4-5 minutes until tender-crisp. Season with salt and pepper.
Meanwhile, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer to a bowl and mash with a teaspoon of olive oil, a pinch of salt and pepper until smooth.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Sprinkle the chopped almonds over the mash for added crunch.
Serve immediately and enjoy your balanced, delicious dinner.
