INGREDIENTS
50g Red Lentils
100g Sweet Potato, diced
100g Diced Tomatoes
50g Yellow Onion, chopped
1 Garlic Clove, minced
1 cup Vegetable Broth (low sodium)
1 tsp Olive Oil
1 tsp Ground Cumin
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Rinse the red lentils under cold water and set aside.
In a medium pot, warm the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
Stir in the ground cumin and smoked paprika, allowing the spices to bloom for about 30 seconds.
Add the diced sweet potato and cook for another 2 minutes, stirring occasionally.
Pour in the vegetable broth and add the rinsed red lentils and diced tomatoes. Bring the mixture to a gentle simmer.
Cover the pot and let the stew simmer for 20-25 minutes, or until the lentils and sweet potato are tender. Stir occasionally and add a splash of water if the stew becomes too thick.
Season with salt and pepper to taste, adjust spices as needed, and serve hot.
