INGREDIENTS
6 oz Chicken Breast (approx. 170g)
150g Brussels Sprouts
1 tbsp Olive Oil
3 tbsp Lemon Juice
2 Garlic Cloves
1 tsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
In a small bowl, whisk together lemon juice, minced garlic, fresh thyme, salt, and pepper.
Pat the chicken breast dry, then rub half of the lemon herb mixture all over the chicken.
Trim and halve the Brussels sprouts; in a mixing bowl, toss them with olive oil, the remaining lemon herb mixture, salt, and pepper.
Place the chicken breast on a baking tray lined with parchment paper and arrange the Brussels sprouts around it in a single layer.
Roast in the oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the Brussels sprouts are crispy on the edges.
Remove from the oven, let the chicken rest for a few minutes, then serve alongside the crispy Brussels sprouts.
