2 Tbsp Almond Flour
1 medium Sweet Potato
1 Tbsp Olive Oil
Spices: Paprika, Garlic Powder, Salt & Pepper
PREPARATION
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Cut the sweet potato into fries. In a bowl, toss the sweet potato fries with olive oil, a pinch of paprika, garlic powder, salt, and pepper.
Arrange the fries on half of the baking sheet and roast in the oven for about 25-30 minutes, turning halfway through for even cooking.
While the fries are roasting, pat the cod fillet dry with a paper towel. Sprinkle both sides lightly with salt, pepper, and a pinch of garlic powder.
Spread 2 tablespoons of almond flour evenly on a plate. Lightly coat the cod fillet in the almond flour, shaking off any excess.
Place the coated fish on the other half of the baking sheet. Bake for about 12-15 minutes until the fish is opaque and flakes easily with a fork.
Once both the fish and fries are done, plate them together and serve immediately while hot.
