INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup chopped Cauliflower
1 tsp Olive Oil (for mash)
1 tsp Olive Oil (for searing)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
In a large skillet, heat 1 teaspoon of olive oil over medium-high heat. Once hot, sear the salmon for about 3-4 minutes on each side until nicely browned and cooked to your preferred doneness.
While the salmon is searing, steam or boil the green beans until tender-crisp, then toss them with minced garlic, salt, and pepper.
For the cauliflower mash, steam the chopped cauliflower until very tender. Transfer to a blender or food processor, add 1 teaspoon of olive oil, a pinch of salt and pepper, and blend until smooth with a slightly chunky texture.
Plate the salmon alongside the garlic green beans and a generous serving of cauliflower mash. Garnish with an extra sprinkle of pepper if desired and serve warm.
