INGREDIENTS
6 oz Chicken Breast
0.5 oz Turkey Pepperoni
1 oz Part-Skim Mozzarella Cheese
2 tbsp Tomato Sauce
1 tsp Olive Oil
1 cup Fresh Spinach
1/4 piece Red Bell Pepper (sliced)
PREPARATION
Preheat your oven to 375°F.
Place the chicken breast on a cutting board. Carefully slice a pocket along the side without cutting all the way through.
Stuff the pocket with turkey pepperoni slices, followed by the mozzarella cheese and tomato sauce.
Secure the opening with toothpicks if necessary to keep the filling inside.
Lightly drizzle olive oil over the stuffed chicken and season with salt and pepper to taste.
Place the chicken in a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked through.
During the last 5 minutes of baking, you can add a handful of fresh spinach and red bell pepper slices on top of the chicken to slightly wilt them for added flavor and color.
Remove from the oven, let rest for a few minutes, then serve warm.
