PREPARATION
Preheat your oven to 400°F.
On a baking sheet, toss the cherry tomatoes with a pinch of salt and pepper. Roast them in the oven for about 10 minutes until they soften and slightly char.
While the tomatoes roast, prepare the chicken. In a shallow bowl, whisk the egg white. In another plate, spread out the whole wheat panko breadcrumbs and season them lightly with salt and pepper.
