INGREDIENTS
5 oz Pork Tenderloin (142g)
1/2 medium Sweet Potato (86g)
1 cup Green Beans (125g)
1 tsp Olive Oil (4.5g)
Salt & Pepper to taste
1 tsp Garlic Powder
PREPARATION
Preheat your oven to 425°F.
Pat the pork tenderloin dry with paper towels. Season it generously with salt, pepper, and garlic powder on all sides.
Heat a skillet over medium-high heat and add the olive oil. Sear the pork tenderloin on all sides until it is nicely browned, about 2-3 minutes per side.
While the pork is searing, peel (if desired) and dice the sweet potato into roughly 1-inch cubes. Trim the ends off the green beans.
Place the sweet potatoes and green beans on a baking sheet. Drizzle with a small amount of olive oil, and season with salt and pepper. Toss to coat evenly.
Once the pork is seared, transfer it to the baking sheet with the vegetables.
Roast in the preheated oven for 15-20 minutes, or until the internal temperature of the pork reaches 145°F and the vegetables are tender.
Remove the pork from the oven and let it rest for 5 minutes before slicing. Serve slices of crispy pork tenderloin alongside the roasted sweet potatoes and green beans.
