INGREDIENTS
4 oz Ground Turkey (93% lean)
1 medium Sweet Potato
1 large Egg
1 large Egg White
1 tsp Olive Oil
1 medium Red Bell Pepper
1/2 medium Yellow Onion
1 clove Garlic
1/2 tsp Paprika
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes for quicker cooking. Dice the red bell pepper and half of a yellow onion, and mince the garlic.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat.
Add the diced sweet potato to the skillet and cook for about 5-7 minutes until it begins to soften.
Add the diced bell pepper, chopped onion, and minced garlic to the skillet. Season with paprika, salt, and pepper, and cook for another 3-4 minutes until the vegetables are tender.
Push the vegetables to one side of the skillet and add the ground turkey. Break it up with a spatula and cook until browned and thoroughly cooked, approximately 5-7 minutes.
Once the turkey is cooked, mix it with the vegetables. Create a small well in the center of the hash and crack the egg into the space. Immediately add the egg white around it.
Cover the skillet with a lid and allow the egg and egg white to steam for about 2-3 minutes, or until they reach your preferred doneness.
Gently stir everything together and serve warm.
