400g Firm Tofu
100g Broccoli
100g Carrots
1 tbsp Olive Oil
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Press the tofu for at least 15 minutes to remove excess water, then cut into 1-inch cubes.
In a bowl, toss the tofu cubes with half of the olive oil, garlic powder, salt, and pepper until evenly coated.
On a separate bowl, toss broccoli and carrots with the remaining olive oil, salt, and pepper.
Spread the tofu cubes on a baking sheet lined with parchment paper and bake for about 25-30 minutes, flipping halfway, until the tofu edges become crispy and golden.
At the same time, spread the vegetables on another baking sheet and roast for 20-25 minutes until tender and lightly charred.
