INGREDIENTS
5 oz Chicken Breast
1 tsp Olive Oil (for chicken)
3/4 cup Sweet Potato Gnocchi (~110g)
1 cup Fresh Spinach
1 tsp Olive Oil (for spinach)
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Parsley & Thyme)
1 Garlic clove
PREPARATION
Pat the chicken breast dry and season it with salt, pepper, minced garlic, and chopped fresh herbs.
Heat 1 teaspoon of olive oil in a non-stick pan over medium-high heat.
Pan-sear the chicken breast for 4-5 minutes on each side until golden and cooked through. Remove from the pan and let it rest before slicing.
In the same pan, add the sweet potato gnocchi and sauté for 3-4 minutes until they develop a slight crisp on the edges.
Add the fresh spinach and an additional teaspoon of olive oil to the pan, stirring until the spinach wilts.
Drizzle lemon juice over the gnocchi and spinach, tossing to combine.
Slice the rested chicken breast and serve it atop the gnocchi and spinach, garnishing with extra fresh herbs if desired.
