A light yet protein-packed salad featuring crispy baked tofu, tender edamame, fresh mixed greens, and vibrant vegetables, all brought together with a bright burst of lemon. This refreshing meal is designed to energize and satisfy while staying within your calorie and protein goals.
INGREDIENTS
250g Firm Tofu
1 cup Shelled Edamame
2 cups Mixed Salad Greens
1/2 medium Red Bell Pepper
1 small Carrot
1 tbsp Lemon Juice
1 tsp Cornstarch
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Press the tofu gently to remove excess moisture. Cut the tofu into bite-sized cubes.
Lightly toss the tofu cubes with salt, pepper, and 1 teaspoon of cornstarch until evenly coated. This will help achieve a crispy exterior.
Spread the tofu cubes in a single layer on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
While the tofu bakes, steam or boil the shelled edamame until tender (about 4-5 minutes), then drain and set aside.
Prepare the base by placing mixed salad greens in a bowl. Add sliced red bell pepper and shredded carrot.
In a small bowl, whisk together 1 tablespoon of fresh lemon juice with a pinch of salt and pepper. For a slightly creamier dressing, you can add a teaspoon of water if desired.
Once the tofu is done, allow it to cool slightly and then add it along with the edamame to the salad bowl.
Drizzle the dressing over the salad, toss gently to combine, and serve immediately.
