INGREDIENTS
1/2 cup Rolled Oats (40g)
1 medium Ripe Banana (101g)
1 scoop Whey Protein Isolate (30g)
1 large Egg
1/4 cup Nonfat Greek Yogurt (60g)
1/4 cup Unsweetened Almond Milk (60g)
1/2 tsp Baking Powder (2g)
1 tsp Cinnamon (2.6g)
PREPARATION
Preheat your oven to 350°F (175°C) and line a muffin tin with liners or lightly spray with cooking oil.
In a blender or food processor, blend the rolled oats into a coarse oat flour.
Combine the oat flour, whey protein isolate, baking powder, and cinnamon in a bowl.
In another bowl, mash the banana and then whisk in the egg, Greek yogurt, and almond milk until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
