INGREDIENTS
400g Extra Firm Tofu
12 Spears Asparagus
1 Tbsp Olive Oil
1 Tbsp Cornstarch
2 Tbsp Lemon Juice
2 Cloves Garlic
2 Tbsp Mixed Fresh Herbs (Rosemary, Thyme, Parsley)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) for the asparagus.
Press the tofu block to remove excess moisture, then cut it into 4 thick steaks.
In a shallow bowl, combine lemon juice, minced garlic, chopped fresh herbs, salt, and pepper.
Marinate the tofu steaks in the herb mixture for at least 15 minutes.
Lightly dust the marinated tofu with cornstarch on all sides to enhance crispiness.
Arrange the asparagus spears on a baking sheet, drizzle with olive oil, and season with salt and pepper.
Roast the asparagus in the preheated oven for 12-15 minutes until tender and slightly crispy.
Heat a non-stick skillet over medium heat and lightly spray with cooking oil if needed.
Place the tofu steaks in the skillet and cook for 4-5 minutes on each side, or until golden and crisp.
Plate the crispy herbed tofu with a side of roasted asparagus and enjoy immediately.
