PREPARATION
Preheat your oven to 425°F. Rinse and halve the baby potatoes, then toss them in olive oil, salt, pepper, and minced garlic.
Spread the potatoes on a baking sheet and roast in the oven for about 20-25 minutes until golden and crispy, flipping halfway through.
While the potatoes roast, take the steak out of the refrigerator to reach room temperature. Season both sides generously with salt and pepper.
