INGREDIENTS
250 g Extra-Firm Tofu
1/2 cup Shelled Edamame (≈78 g)
1/2 cup Broccoli Florets (≈45 g)
1/2 cup Red Bell Pepper, sliced (≈75 g)
1/2 cup Snap Peas (≈50 g)
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tbsp Sesame Seeds
1 clove Garlic, minced
1 tsp Ginger, minced
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a medium bowl, combine the soy sauce, minced garlic, minced ginger, and a drizzle of sesame oil to create a marinade.
Gently toss the tofu cubes in the marinade and let sit for 10 minutes.
Heat a non-stick skillet over medium-high heat and add the marinated tofu. Fry until all sides turn golden and crispy, about 5-7 minutes.
In a separate pan, heat a small amount of sesame oil and add the broccoli, red bell pepper, and snap peas. Stir-fry for 3-4 minutes until just tender but still crisp.
Add the shelled edamame to the vegetables and stir-fry for an additional 2 minutes.
Combine the crispy tofu with the stir-fried vegetables in the skillet. Toss gently to mix evenly.
Sprinkle toasted sesame seeds over the dish and give a final stir before serving.
