PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin side down and sear for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon is cooking, steam the cauliflower florets until tender (about 8-10 minutes). Once done, transfer to a bowl and mash with 0.5 tablespoon of olive oil, adding a pinch of salt and pepper to taste.
In a separate pan, heat 1 teaspoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add the green beans. Sauté the green beans for about 4-5 minutes until they are tender-crisp, seasoning with salt and pepper.
