200 g Firm Tofu
1 cup Broccoli (91 g)
1 medium Red Bell Pepper (120 g)
0.5 cup Shelled Edamame (75 g)
1 tbsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger
2 tbsp Low-Sodium Soy Sauce
2 tsp Sesame Oil
PREPARATION
Press the tofu for about 15 minutes to remove excess moisture. Once pressed, cut into 1-inch cubes.
Heat 1 teaspoon of sesame oil in a non-stick skillet over medium-high heat. Add tofu cubes and fry until all sides are golden and crispy. Remove tofu from the skillet and set aside.
In the same skillet, add the remaining sesame oil. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
Add chopped broccoli florets, sliced red bell pepper, and shelled edamame. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the crispy tofu to the skillet. Drizzle with low-sodium soy sauce and toss gently to combine all the flavors.
Cook for an additional 1-2 minutes to warm everything through. Remove from heat.
Transfer the stir-fry to a serving dish and sprinkle toasted sesame seeds on top before serving.
