INGREDIENTS
4 oz Chicken Breast
1/4 cup Whole Wheat Breadcrumbs
1 large Egg White
1 oz Mozzarella Cheese
1/4 cup Fresh Tomato Sauce
Olive Oil Spray
2 tbsp Fresh Basil
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Flatten the chicken breast slightly for even cooking. Pat dry with paper towels.
In a shallow dish, add the whole wheat breadcrumbs. In another small bowl, whisk the egg white.
Dip the chicken breast first into the egg white, then coat it evenly with the breadcrumbs.
Place the breaded chicken on the prepared baking sheet and lightly spray with olive oil.
Bake for 20-25 minutes or until the chicken is cooked through and the coating is crispy.
Remove the chicken from the oven, place the slice of mozzarella on top, and spoon the fresh tomato sauce over it.
Return to the oven on broil setting for 2-3 minutes until the cheese is melted and slightly bubbly.
Garnish with fresh basil leaves and serve immediately.
