INGREDIENTS
5 ounces Sirloin Steak
1 small Sweet Potato
1 cup Green Beans
1 teaspoon Olive Oil
1 clove Garlic
1 tablespoon Fresh Herbs (Rosemary, Thyme, Parsley)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the sweet potato and green beans.
Peel and cube the sweet potato into bite-sized pieces. Trim the ends of the green beans.
Toss the sweet potato cubes and green beans with half a teaspoon of olive oil, salt, and pepper. Spread them out on a baking sheet. Roast in the oven for about 20-25 minutes until tender and lightly browned, stirring halfway through.
While the vegetables roast, take the steak out of the refrigerator to come to room temperature. Pat dry with paper towels.
Season the steak generously with salt and pepper on both sides.
Heat a skillet over medium-high heat. Add the remaining olive oil and the garlic clove (crushed lightly). Let the garlic infuse the oil for about 30 seconds.
Place the steak in the hot skillet and cook for about 3-4 minutes on each side or until the desired level of doneness is reached, spooning the flavored oil over the steak as it cooks.
In the last minute of cooking, add the fresh herbs to the pan to release their aroma.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
Plate the sliced steak alongside the roasted sweet potatoes and green beans. Serve immediately.
