INGREDIENTS
6 oz Lean Ground Turkey (~170g)
2 medium Bell Peppers (~150g each)
1 Jalapeño Pepper
1 slice Crispy Bacon
1/2 small Onion
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes carefully.
In a skillet, heat olive oil over medium heat. Add finely chopped onion and diced jalapeño, sauté until softened, about 3-4 minutes.
Add the lean ground turkey to the skillet, breaking it up as it cooks. Season with salt and pepper and cook until the turkey is browned and cooked through, approximately 6-8 minutes.
Crumble the cooked crispy bacon and stir it into the turkey mixture for added crunch and smoky flavor.
Fill each hollowed bell pepper with the turkey mixture, pressing gently to pack the filling.
Place the stuffed peppers in a baking dish and cover loosely with foil. Bake in the preheated oven for 20-25 minutes, until the peppers are tender.
Remove the foil in the last 5 minutes of baking to allow the tops to slightly brown.
Serve warm and enjoy this protein-packed, flavorful dish.
