INGREDIENTS
6 oz Salmon Fillet (~170g)
1 cup Green Beans (~125g)
1 cup Cauliflower (~107g)
1/4 cup Chickpeas (~41g, drained)
2 cloves Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season it with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add the olive oil. Sear the salmon skin-side down for about 3-4 minutes, then flip and cook the other side until just cooked through, approximately 3 minutes more.
Meanwhile, trim the ends of the green beans. In another pan, lightly sauté the green beans with one minced garlic clove in a small drizzle of olive oil over medium heat until crisp-tender, about 5 minutes. Season with salt and pepper.
Steam the cauliflower florets (from about 1 cup chopped raw) until tender, around 8-10 minutes. Transfer the steamed cauliflower to a bowl along with the chickpeas and the remaining minced garlic. Mash until a creamy consistency is achieved; add salt and pepper to taste.
Plate the seared salmon alongside a generous serving of garlic green beans and a scoop of creamy cauliflower and chickpea mash. Serve immediately and enjoy!
