Preheat your oven to 425°F (220°C).

In a separate bowl, toss the zucchini fries with olive oil, remaining garlic, a pinch of salt, and pepper.
Spread the zucchini fries on a baking sheet in a single layer and roast in the oven for 15-20 minutes, turning halfway, until crispy.
Five minutes before zucchini fries are done, sprinkle the grated Parmesan over them and return to the oven to allow the cheese to melt and crisp slightly.
