INGREDIENTS
5 oz Chicken Breast (142g)
1 cup cooked Whole Wheat Pasta (140g)
1.5 cups Broccoli (134g)
1 tbsp Olive Oil (14g)
Salt, Black Pepper & Garlic Powder to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Prepare the broccoli by tossing it with a drizzle of olive oil, salt, pepper, and garlic powder. Spread evenly on a baking tray and roast for 15-20 minutes until crispy.
While the broccoli is roasting, season the chicken breast with salt, pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat and add a small drizzle of olive oil. Once hot, add the chicken breast and sear for about 5-6 minutes on each side or until the internal temperature reaches 165°F.
In a separate pot, warm the cooked whole wheat pasta or if using uncooked pasta, follow package instructions until al dente.
Plate the pasta and top with sliced chicken breast. Add the roasted broccoli on the side, and finish with a light drizzle of olive oil if desired.
