100g Sweet Potato
50g Red Bell Pepper
30g Red Onion
1 tsp Olive Oil
3 Large Eggs
1 Egg White
50g Lean Turkey Sausage
1/4 portion Avocado
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and red onion.
Heat a non-stick skillet over medium heat and add the olive oil.
Add the sweet potato cubes to the skillet and cook until they begin to soften, about 5 minutes.
Stir in the red bell pepper and red onion along with the diced turkey sausage. Continue to sauté until the sweet potatoes are tender and slightly crispy, about another 5-7 minutes. Season with salt and pepper.
In a separate pan, cook the eggs. Fry the 3 whole eggs and the additional egg white in a lightly greased pan to your desired doneness.
