PREPARATION
Preheat the oven to 425°F.
Toss the broccoli and diced sweet potato in 2 tsp of olive oil and season lightly with salt and pepper. Spread them evenly on a baking sheet.
Roast the vegetables in the oven for about 20-25 minutes until tender and slightly caramelized, stirring halfway through.
