INGREDIENTS
1 cup Black Beans (canned, no salt added)
1 large Whole Egg
2 large Egg Whites
1/4 cup Rolled Oats
1/4 cup diced Red Bell Pepper
1/4 cup diced Yellow Onion
1/2 tsp Smoked Paprika
1/4 tsp Garlic Powder
1 medium Sweet Potato
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for the sweet potatoes.
Peel (if desired) and cut the sweet potato into 1/2-inch cubes. Toss with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and crispy on the edges.
While the sweet potatoes roast, rinse and drain the black beans. In a large bowl, mash the beans leaving some texture.
Stir in the whole egg, egg whites, and rolled oats until well combined.
Add the diced red bell pepper, yellow onion, smoked paprika, garlic powder, salt, and pepper. Mix thoroughly.
Form the mixture into 2 equal-sized patties.
Heat a non-stick skillet over medium heat and lightly spray with cooking spray or use a small amount of olive oil. Cook the patties for about 4-5 minutes per side until a nice crust forms and they are heated through.
Plate a burger with a side of the crispy roasted sweet potato cubes. Enjoy your hearty, smoky black bean burger meal!
