PREPARATION
Press the tofu lightly to remove excess moisture. Cut it into thin strips.
In a small bowl, mix rice vinegar, low-sodium soy sauce, and sesame oil to create a light dressing.
Heat a non-stick pan over medium-high heat, add the tofu strips, and stir-fry until they turn golden on all sides, about 5-7 minutes. Drizzle a small amount of the dressing over tofu during the last minute of cooking.
Meanwhile, prepare the vegetables: peel and julienne the carrot, julienne the red bell pepper, and slice the cucumber into thin strips.
