Crispy Sweet Potato and Egg Hash with Fresh Herbs
Enjoy a vibrant and hearty hash featuring crispy sweet potatoes, perfectly cooked eggs, lean turkey sausage, and a burst of fresh garden herbs. This dish boasts a delightful mix of textures—crisp edges on the sweet potato and savory, tender eggs—accented by aromatic herbs that elevate every bite.
INGREDIENTS
1 medium Sweet Potato
1 whole egg + 3 egg whites
1 turkey sausage link (60g)
1 cup Fresh Spinach
1 tsp Olive Oil
2 tbsp Fresh Herbs (Parsley, Cilantro, or Basil)
Salt & Pepper to taste
PREPARATION
Preheat a large non-stick skillet over medium heat and add 1 teaspoon of olive oil.
Peel (if desired) and dice the sweet potato into small cubes. Sauté the sweet potato in the skillet for about 5-7 minutes until they begin to soften and develop slight crispiness.
While the sweet potato cooks, slice the turkey sausage into rounds or bite-sized pieces.
Add the turkey sausage to the skillet and continue cooking for another 3-4 minutes until the sausage is heated through and starting to brown.
Push the sweet potato and sausage to the side of the skillet. Crack one whole egg and add three egg whites into the cleared space. Season with a pinch of salt and pepper. Let them cook until the whites are set but yolk remains a bit runny, or to your preferred doneness.
Toss in the fresh spinach and herbs, stirring gently to combine and wilt the spinach slightly.
Mix all components in the skillet, combine flavors, and adjust seasonings with additional salt and pepper if needed.
Plate the hash and serve immediately, enjoying the balance of crispy sweet potato, savory sausage, and perfectly cooked eggs complemented by fresh herbs.
