INGREDIENTS
5 oz Lean Ground Turkey (142g)
1/2 cup cooked Brown Rice (100g)
1 medium Bell Pepper (120g)
1 large Egg White (33g)
1/4 cup diced Onion (40g)
1 clove Garlic, minced
1 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C).
Bell pepper: Slice the top off a medium bell pepper and remove the seeds and membranes, setting aside the top for later if desired.
In a skillet over medium heat, lightly sauté the diced onion and minced garlic until fragrant and slightly softened.
Add the lean ground turkey to the skillet and cook until it is browned and mostly cooked through.
Mix in the cooked brown rice and stir well, then pour in the egg white and allow it to combine fully with the mixture. Season with salt and pepper and toss in the fresh parsley.
Spoon the turkey and rice filling into the hollowed bell pepper, ensuring it is evenly filled.
Place the stuffed bell pepper in an oven-safe dish and cover loosely with foil.
Bake in the preheated oven for 25-30 minutes until the bell pepper is tender and the filling has come together.
Remove from the oven and serve warm for a healthy, balanced meal.
