INGREDIENTS
5 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
1.5 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat.
Place the salmon fillet skin-side down in the pan and sear for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until done to your preference.
While the salmon cooks, peel and cube the sweet potato, then boil in water until tender. Drain and mash with a pinch of salt and pepper.
Steam the green beans until just tender, then toss them in a small skillet with a bit of olive oil and minced garlic over medium heat for 2-3 minutes.
Plate the sweet potato mash as the base, top with the seared salmon, and serve the garlic green beans on the side.
