INGREDIENTS
5 oz Salmon Fillet
100 g Asparagus
1 cup Cauliflower (approx. 150 g)
1/2 tbsp Olive Oil
1/4 cup Plain Greek Yogurt
1 clove Garlic
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium-high heat.
Add the salmon, skin-side down if applicable, and sear for about 4-5 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until the salmon is cooked through.
While the salmon is cooking, steam the asparagus in a steamer or microwave until tender, about 3-4 minutes.
Steam the cauliflower until soft, about 8 minutes, then transfer to a bowl.
Add 1 minced garlic clove to the warm cauliflower along with the Greek yogurt and lemon juice. Mash until smooth, adding salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Serve immediately.
