INGREDIENTS
200g Extra Firm Tofu
100g Shelled Edamame
1 medium Red Bell Pepper
1 cup chopped Broccoli
1 medium Carrot
1 tsp Sesame Oil
1 tbsp Reduced Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
1 Garlic clove
PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, combine the tofu cubes with a drizzle of soy sauce and let marinate for 10 minutes.
Heat sesame oil in a non-stick pan over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes.
Meanwhile, chop the red bell pepper, broccoli, and carrot into bite-sized pieces. Mince the garlic.
Add the garlic to the pan with tofu during the last minute of cooking.
Stir in the prepared vegetables and cook for an additional 3-4 minutes until they are slightly tender but still crisp.
Mix in the edamame, rice vinegar, and remaining soy sauce, stirring to combine everything well.
Remove from heat and sprinkle toasted sesame seeds over the top before serving.
