INGREDIENTS
6 oz Wild Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
1 tsp Lemon Juice
PREPARATION
Season the salmon fillet with a pinch of salt and black pepper on both sides.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Once hot, sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until cooked through.
While the salmon is searing, steam the cauliflower until tender, about 8-10 minutes.
In a separate pan, add the remaining olive oil and sauté the minced garlic cloves until fragrant. Add the green beans and a pinch of salt, cooking until they are crisp-tender, about 5 minutes.
Once the cauliflower is tender, blend or mash it with a fork along with the lemon juice, salt, and pepper until smooth and creamy.
Plate the seared salmon alongside a serving of garlic green beans and a scoop of cauliflower mash. Drizzle additional lemon juice if desired.
